Gala Raspberry Pie

Gala apples aren't typically considered good pie apples, but in this recipe they are a real treat. When paired with tangy raspberries the mild flavors of the Gala are a perfect complement.

You'll need approximately 8 apples for the pie.

For 9" Pie
½ cup granulated sugar
½ cup packed brown sugar
1 tsp. cinnamon
6 cups (3 lbs. of apples) of Gala apples
1/2 pint raspberries (about 1/2 cup)

1½ tbsp. butter
2 tbsp. flour
½ tsp. lemon juice

Sprinkle lemon juice on apples. Mix sugar, cinnamon and flour. Mix dry ingredients with apples. Fill bottom crust. Drop dollops of butter on top. Moisten edges of bottom crust and cover with top crust. Sprinkle with
½ hr. at 375 and ½ at 350. Cook until apples are tender testing with toothpick. If after an hour, the pie is not done, reduce heat to 250 and cook until apples are tender.
