Strawberry Pecan Salad
Great texture and flavors define this salad. One taste and you'll forget your other courses -or - ad shredded, baked chicken and officially turn this salad into an entree.
1 pint strawberries - rinse, stem and halve berries. Sprinkle with 1 T sugar. 1/3 of medium size Vidalia onion - chopped 1 avocado - sliced
1 head of romaine lettuce - chopped. Note: Substitute pre-packaged mixed greens for simplicity. 1/4 c pecans - roughly chopped
1/4 c bleu cheese crumbles
Vinaigrette dressing - We prefer Kraft's Tuscan House Italian with a bit of enhancement: 1 tsp applce cide vinegar; 1 tsp sugar; and 1/2 tsp fresh lime juice.
Toast pecans in a splash of olive oil. Toss pecans and other ingredients in serving bow and top with dressing.
Makes 4 large servings.
